Mas o que é uma “Arlette”? Bem, é uma espécie de massa fina, estaladiça e caramelizada, feita de massa folhada (neste caso, caseira) e açúcar de confeiteiro e pronto! O resultado é incrivelmente leve e saboroso e é um acompanhamento perfeito para gelados e sorvetes. Extremamente simples de fazer, as “arlettes” são semelhantes às palmilhas, mas muito mais finas e caramelizadas. Uma das minhas receitas favoritas pela sua simplicidade e resultado.
Receita para arlettes:
Massa folhada caseira (clique no nome para ir directamente para a receita). Também pode utilizar massa folhada de qualidade industrial que não seja enrolada.
-gelado de açúcar
-e nada mais!!!
As instruções
A superfície de trabalho é ligeiramente florida, mas não em demasia. Colocar um pedaço de massa folhada num quadrado.
Estender a massa finamente. Se não estiver tudo direito, não importa!
Enrole-o numa salsicha.
Em seguida, cortar a massa em pedaços. Quanto maiores forem as peças, maiores serão as arlettes!
Colocar uma pilha de açúcar de confeiteiro na superfície de trabalho.
Picar os pedaços de massa em açúcar de confeiteiro de ambos os lados.
Em seguida, enrolar finamente em açúcar de confeiteiro. A massa absorverá o açúcar que lhe convém!
Pode ver a diferença de tamanho entre as peças pequenas e o tamanho da arlette! Se quiser arlettes pequenas, tem de cortar a massa folhada de forma mais fina.
Colocar as arlettes sobre um tabuleiro forrado com papel vegetal. Podem ser apertadas porque a massa encolherá em vez de se espalhar .
Asse durante 8 a 1 minuto, dependendo da potência do seu forno! Observe a primeira vez e depois aplique a hora certa às outras placas!
DEVE ser guardado numa caixa hermética! Caso contrário, as arlettes perderão a sua textura estaladiça!
