Los «amaretti» son galletas italianas. Hay tantos como cocineros italianos. El principio es una especie de «macarrón» con almendras dulces y amargas, a veces con huesos de albaricoque. Pueden ser crujientes o suaves. Amaretto (plural amaretti) es el diminutivo de amargo (amaro). Propongo una receta sencilla, rápida y deliciosa que trae el crujido de la torta, a continuación, que luego revela un corazón muy tierno con el buen sabor de las almendras amargas. ¡Para disfrutar con un café!
Receta de «amaretti» para unos 50:
-280g de almendras blanqueadas
-230g de azúcar
-1+1/2 cucharadita de extracto de almendra amarga
-4 claras de huevo
Comience por precalentar el horno a 190°C.
Mezclar las almendras y el azúcar.
Cuando todo esté bien pulverizado, añadir el extracto de almendra amarga y 2 claras de huevo. Esto hará una especie de pasta de almendras.
Batir las otras dos claras a punto de nieve y, sin dejar de batir, añadir la pasta de almendras cucharada a cucharada.
El resultado es una pasta casi líquida.
En bandejas de horno forradas con papel de hornear, hacer montones del tamaño de los macarrones. Lo mejor es utilizar una manga pastelera para ello.
Espolvorear con azúcar glas.
Introducir en el horno y hornear durante 12-13 minutos a 190°C . Los amaretti deben empezar a dorarse en los bordes.
Dejar enfriar sobre una rejilla y guardar en un recipiente hermético.
