Amaretti” são bolachas italianas. Há tantos como há cozinheiros italianos. O princípio é uma espécie de “macaroon” com amêndoas doces e amargas, por vezes com amêndoas de damasco. Podem ser estaladiças ou macias. Amaretto (plural amaretti) é o diminutivo do amargo (amaro). Proponho uma receita simples, rápida e deliciosa que traz o crocante do bolo, depois que depois revela um coração muito tenro com o bom sabor das amêndoas amargas. Para ser apreciado com um café!
Receita de “amaretti” para cerca de 50:
-280g de amêndoas branqueadas
-230g de açúcar
-1+1/2 colher de chá de extracto de amêndoa amarga
-4 claras de ovo
Comece por pré-aquecer o forno a 190°C.
Misturar as amêndoas e o açúcar.
Quando tudo estiver finamente pulverizado, adicionar o extracto de amêndoa amarga e 2 claras de ovo. Isto fará uma espécie de pasta de amêndoa.
Bater as outras duas claras de ovo até ficarem firmes, depois, enquanto se continua a bater, adicionar a colher de pasta de amêndoa por colher.
O resultado é uma pasta quase líquida.
Em tabuleiros forrados com papel vegetal, fazer pilhas do tamanho de macaroons. É melhor usar um saco de tubagem para isto.
Polvilhar com açúcar de confeiteiro.
Colocar no forno e cozer durante 12-13 minutos a 190°C . Os amaretti devem começar a dourar nas bordas.
Deixar arrefecer num suporte de arame e armazenar num recipiente hermético.

Les « Amaretti » sont des biscuits italiens. Il en existe autant que de cuisinières italiennes. Le principe est une sorte de « macaron » aux amandes douces et aux amandes amères, parfois avec des amandes de noyaux d’abricots. Ils peuvent être craquants ou moelleux. Amaretto (amaretti au pluriel) est le diminutif d’amère (amaro). Je vous propose une recette simple, rapide et délicieuse qui apporte le croquant du gâteau, puis qui révèle ensuite un coeur très tendre au bon goût d’amandes amères. A déguster avec un café!
