L’automne est déjà bien présent. J’adore le vent frais et les feuilles qui tombent. C’est toujours un bon prétexte pour cuisiner de bons desserts chez soi. Je vous propose cette fois une tarte aux poires, chocolat et amandes. C’est un peu finalement comme une bourdaloue au chocolat. Le résultat est comme j’aime. Une pâte très croustillante, une crème d’amande moelleuse et des poires fondantes. Un vrai délice qui embaumera toute la maison de son alléchante odeur !
Préparez la pâte sucrée, comme dans ma recette de tarte aux fraises citron et basilic (lien ICI) en remplaçant juste la poudre d’amande par de la poudre de noisette.Mettez ensuite la pâte dans un film étirable à plat.
J’ai pris ici un cadre carré, mais vous pouvez prendre un moule à tarte classique de 20cm de diamètre.
Faites cuire à blanc avec la méthode de votre choix à 180°C. La pâte doit être bien blonde sans être pour autant dorée. J’avais mis ici un sac de farine en film étirable résistant à la cuisson.
Épluchez et coupez les poires en quartiers. Tout dépend de leur taille. J’en ai mis ici deux, mais vous pouvez ne préparer 3 et au pire vous les dégusterez comme cela !
Je les ai faites cuire ici au four à micro-ondes pendant 5 minutes avec un couvercle. Elles cuisent parfaitement de cette façon. Vous pouvez aussi prendre des poires au sirop ou les pocher vous-mêmes au sirop.
Pour la crème d’amande : faites fondre le beurre demi-sel et le chocolat ensemble.
Ajoutez la cassonade et la poudre d’amande.
Ajoutez aussi les 110g d’œuf et mélangez bien.
Versez la crème d’amande puis les poires dans la pâte cuite à blanc.
Parsemez de quelques amandes effilées.
Refaites cuire à 175°C pendant 45 minutes. surveillez la cuisson et adaptez-la à votre propre four.
