Je vous avais déjà proposé il y a déjà plus de deux ans une recette de shortbreads (recette ICI). J’aime toujours autant les premiers… Mais je vous donne aujourd’hui une nouvelle version qui est vraiment ma favorite! Ils sont cette fois cuits dans un moule, sont plus fins et plus dorés et surtout il y a plein de gingembre dedans qui leur donne un goût unique. Ces sablés sont réellement délicieux et tous les gens qui les ont goûtés les ont adorés… Leur texture fabuleuse et le gingembre donnent une version explosive de ces fameux gâteaux écossais…
Préchauffer le four à 170°C.Mettre le beurre salé mou et le sucre dans un bol.
Bien mélanger pour obtenir une sorte de crème (avec la feuille, le « K » si on a un robot!).
Mélanger la farine, la farine de riz et le gingembre en poudre.
Ajouter le mélange farineux à la crème beurre-sucre. Mélanger jusqu’à obtenir une pâte homogène sans insister. Couper le gingembre confit en très petits cubes.
Les ajouter à la pâte et mélanger rapidement.
Ramener la pâte en boule.
Mettre la pâte dans un moule carré de 20X20cm garni de papier sulfurisé.
Aplanir la surface avec le dos d’une cuiller.
Saupoudrer le dessus de la pâte avec du sucre, puis trouer (ici je l’ai fait avec une baguette chinoise).
Cuire 35-40 minutes (ou plus) pour obtenir une belle pâte dorée. Il faut surveiller car chaque four cuit différemment Couper les shortbreads quand la pâte est encore chaude, ce sera beaucoup plus facile.
Démouler quand les shortbreads ont refroidi. Conserver en boîte hermétique.
