J’étais en Chine il n’y a pas longtemps et j’avais acheté une boite de ces sablés dans une pâtisserie assez connue. Je les ai tout de suite aimés. Vous connaissez peut être mon obsession: j’ai eu très envie de les refaire à la maison ! J’ai demandé à une interprète de me traduire la liste des ingrédients et j’ai donc fait des expériences dans ma cuisine. Cette version maison est bien meilleure que ceux de la boite, et je vous invite à les essayer car ils ont une consistance irrésistible. Ils sont très croustillants et la noix de cajou y est bien mise en valeur. C’est bien simple, mes sablés ont disparu en un temps record !
Prenez pour cette recette des noix de cajou crues !
Mixez 60g (sur les 100) pour obtenir une poudre.
Versez cette poudre dans un récipient ou dans la cuve de votre robot. Ajoutez la farine et le sucre.
Versez également le sel et la levure. Mélangez bien.
Coupez les 40g de noix restantes en morceaux.
Hop dans la cuve !
Versez l’huile.
Mélangez avec la feuille. Vous pouvez le faire à la main si vous n’avez pas de robot.
Vous devez obtenir une poudre sableuse (avec les morceaux de noix !).
Versez les 45g d’œuf (battez un œuf en omelette et pesez-en la quantité nécessaire).
Mélangez juste assez sans insister pour que la pâte s’agglomère. Faites une boule à la main.
Faites des boulettes de 35g que vous aplatirez dans la paume de votre main. Pas de panique, car la pâte est friable. Mais en cuisant, elle deviendra parfaite avec une incroyable consistance.
Faites cuire les sablés à 180°C entre 15 et 20 minutes. Ils doivent être bien dorés (un peu plus que sur la photo où je les avais finalement remis à cuire).
Laissez-les refroidir sur une grille puis conservez-dans une boite hermétique.
