Des sablés 100% pistache à la texture ultra croustillante. Si, comme moi, vous êtes fanatiques de pistaches, alors ces petits gâteaux secs sont faits pour vous… La recette est prête en 5 minutes et la cuisson dégagera un incroyable parfum. À déguster avec une glace par exemple !
Mettez la farine, la fécule de pomme de terre, la poudre de pistache, le sucre glace, le sel et la levure dans un récipient.
Mélangez puis ajoutez le beurre doux mou.
Vous pouvez tout à fait mélanger à main, cela prend 3 minutes ! Versez ensuite la demi cuillerée d’arôme amande amère et les pistaches crues entières.
Mélangez pour bien répartir les pistaches. Ramenez ensuite la pâte en boule.
Façonnez un boudin de 5 cm de diamètre.
Mettez ce boudin de pâte sous film étirable puis placez-le au frais pendant au moins deux heures. Avec un très bon couteau, coupez ensuite des tranches de 1cm d’épaisseur. Tenez fermement le boudin pour qu’il ne se casse pas quand vous tranchez les pistaches.
Préchauffez votre four à 180°C et placez les tranches sur une plaque à pâtisserie garnie de papier sulfurisé.
Faites cuire les sablés jusqu’à ce qu’ils soient bien dorés (comptez 15 à 20 minutes).
Laissez-les refroidir sur une plaque à pâtisserie puis stockez-les dans une boite hermétique !
Vous pourrez les conserver ainsi plusieurs jours. À croquer ensuite sans modération…
