Petit séjour à Pékin où j’ai de nouveau pris un cours de cuisine authentique. Un des plats de ce cours a été le porc sauté aux pousses d’ail (oui « pousses » et non « gousses »!!). Facile à faire. Le plus difficile est de trouver les pousses d’ail, ce qui ne pose pas de souci si on se rend dans une épicerie asiatique! Les pousses d’ail font plus penser à des sortes de haricots verts avec un léger goût d’ail. On peut aussi remplacer ce légume par un autre légume vert.
Commencer par préparer la marinade en mélangeant bien tous les ingrédients, à savoir la sauce de soja claire, le vin chinois et la maïzena.
Couper le porc en morceaux, puis verser la marinade dessus. Laisser mariner au moins 15 minutes.
Préparer la sauce en mélangeant bien tous les ingrédients dans un petit bol. Réserver pour la suite.
Laver les pousses d’ail, couper la fleur sur le dessus. Couper les pousses en morceaux de 5 cm environ.
Chauffer le wok assez fort avec deux cuillerées à soupe d’huile. Ajouter les pousses d’ail puis deux cuillerées à soupe d’eau (ceci afin de cuire les pousses). Faire revenir le tout 1 minutes puis retirer les pousses du wok et mettre de côté.
Remettre le wok vide sur feu fort, ajouter 3 cuillerées à soupe d’huile puis ajouter le porc avec la marinade.
Faire revenir en séparant bien les morceaux de porc pour qu’ils se colorent puis ajouter le gingembre en julienne.
Faire revenir 1 minute pusi ajouter les pousses d’ail. Ajouter ensuite la sauce et faire revenir jusqu’à ce que la sauce épaississe. Servir immédiatement.
