Les légumes braisés sont dans cette recette, la pomme de terre, l’aubergine et le poivron vert. Cuits une première fois séparéments, ils sont ensuite braisés dans un wok.
Bien laver les légumes. Couper les pommes de terre (avec la peau ou sans). Sur feu modéré, chauffer le wok avec 2 cuillerées à soupe d’huile. Ajouter les pommes de terre et les cuire d’un côté jusqu’à ce qu’elles soient colorées.
Les retourner et cuire l’autre face. Quand le deuxième côté se colore, enlever du wok et réserver.
Ajouter de nouveau 2 cuillerées à soupe d’huile et procéder de la même façon avec les aubergines.
Puis avec les poivrons (toujours avec un peu d’huile!).
Dans le wok vide, sur feu modéré, ajouter 2 cuillerées à soupe d’huile, l’ail et la ciboule. Cuire pour faire dorer légérement.
Ajouter l’eau, la sauce de soja claire, la sauce d’huitre, le sucre, le vin chinois et le sel.
Ajouter les pommes de terre et couvrir le wok. Au bout de 10 minutes, ajouter les aubergines. Couvrir de nouveau et cuire pour 10 nouvelles minutes. Ajouter finalement les poivrons verts. Couvrir et cuire jusqu’à ce que l’eau se soit évaporée et qu’il ne reste qu’une sauce un peu épaisse. Servir immédiatement.
