Procéder à la confection des macaron. On peut ajouter une pointe de couteau de vanille en poudre dans le tant pour tant.
Contiinuer ensuite avec la garniture vanille. Mettre l’oeuf et 50g (des 125g) dans un bol. Fouetter légérement et ajouter la maïzena.
Faire tremper la feuille de gélatine dans de l’eau froide.
Mettre les 75g de sucre avec l’eau et la gousse de vanille fendue en deux et grattée dans une casserole. Ajouter également le sucre vanillé et la vanille en poudre. Faire bouillir. Arreter la cuisson et laisser infuser 10 minutes hors du feu.
Verser le sirop sur le mélange d’oeuf. Bien mélanger puis remettre le tout dans la casserole. Mettre à cuire doucement en ne cessant jamais de remuer. Laisser bouillir doucement jusqu’à ce que le mélange épaississe. Ajouter à ce moment la gélatine essorée.
Bien mélanger, puis ajouter l’oxyde de titane (je mets ce colorant pour amplifier le contraste avec les grains de vanilline) hors du feu.
Ajouter la poudre d’amande.
Et pour finir ajouter le beurre en morceaux.
Bien mélanger puis laisser refroidir. Quand la garniture commence à prendre , la mettre dans une poche à douille puis garnir les macarons. Laisser au frais une nuit avant de consommer.
