Commencer par ouvrir le pomelo. Inciser tout le pourtour sans enfoncer la lame dans la chair.
Puis en insérant la main entre la peau et la chair, décoller la peau délicatement.
Couper le tour de cette coque de peau en triangles.
Couper un cercle dans une feuille de bananier propre et lavée. Mettre ce cercle de feuille dans le bol de peau de pomelo! Sans feuille de bananier, on peut aussi mettre une feuille de laitue!!
Décortiquer le corps des crevettes. Laisser juste la queue.
Cuire à l’eau pendant 2-3 minutes. Egoutter et mettre de côté.
Mettre le jus de citron, le sucre et le sel dans un bol.
Ajouter la chair de pomelo (180g!!Pas tout!). Ajouter l’échalotte émincée, les ciboules chinoises en petits morceaux. Puis l’échalotte frite.
Ecraser les cacahuètes au mortier en poudre grossière.
Faire de même avec les crevettes séchées.
Tout ajouter à la salade, puis la poudre de piment.
Chauffer une poêle, y mettre la noix de coco râpée. La faire légérement griller, mais surtout pas brûler!! Ca va vite!!
L’ajouter à la salade, bien mélanger.
Placer la salade dans le bol formé par la peau et la feuille de bananier.
Décorer avec les crevettes et des tiges de ciboules. Réserver au frais jusqu’au moment de servir.
