Je continue mon partenariat avec Alvalle (deux recettes par mois jusqu’à août!) et j’en profite pour vous créer des recettes, qui je l’espère, vous plairont… Surtout avec les beaux jours qui reviennent! Cette année par chance, vous le savez, je suis allé en Andalousie et j’ai pu visiter Arcos de la Frontera qui possède une délicieuse recette de sablés sucrés à l’huile d’olive et à l’anis (voir recette ICI). Il ne m’en a pas fallu plus pour avoir envie de vous adapter cette spécialité en version salée, qui accompagnera à merveille ma Soupe Froide Alvalle. Cela donne des petits pains croustillants au cumin, à l’anis, au sésame et à l’huile d’olive, surmontés d’amandes grillées! C’est véritablement addictif…pour l’apéritif!
Mettre tous les ingrédients, sauf les amandes et l’eau dans la cuve d’un robot. On peut bien sûr faire cette pâte à la main!
Mélanger le tout puis ajouter de l’eau tiède progessivement pour former une pâte à pain.
Cela ne prend pas beaucoup de temps. Pétrir pendant une quinzaine de minutes.
Former des boulettes de 30g chacune. Les placer sur une plaque à pâtisserie garnie de papier sulfurisé.
Aplatir chaque boulette à la main puis passer un peu d’eau au pinceau sur chacune d’entre elles.
Placer 3 amandes sur chaque petit pain. Laisser ensuite lever à tempéature ambiante pendant 30 minutes.
Cuire à 180 degrés pendant 15-20 minutes en surveillant. Il faut avoir de beaux petits pains dorés! Déguster immédiatement avec la Soupe Froide de poivron doux et épices d’Alvalle!
