J’avais très envie de refaire des petites madeleines, un peu différentes de celles que je vous avais proposées au tout début de mon blog il y a 6 ans (voir recette ICI). Cette fois ce sont des madeleines au miel, citron vert et gingembre. Je voulais profiter de mon moule qui donne des madeleines toutes rondes. Vous pouvez bien entendu les faire cuire dans des moules plus traditionnels.
Versez le miel, le sucre et le beurre fondu dans un récipient.
Mélangez et ajoutez les œufs et le jaune.
Versez la farine en une fois et mélangez vivement jusqu’à obtenir une pâte lisse.
Ajoutez le zeste du citron vert.
Râpez les 2-3 cm de gingembre
La pâte est presque prête.
Faites chauffer votre four à 185°C. Ajoutez la levure chimique à la pâte au dernier moment et mélangez très soigneusement.
Je sais que vous allez me demander où j’ai acheté ce moule à madeleines qui vont plaire à certains !! Mais pour être honnête, je ne sais plus du tout ! C’est sûr que ce n’est pas en France et cela fait plusieurs années que je me le suis procuré.
Je mets un petit coup de spray de bombe de démoulage, ou bien du beurre fondu, et j’enlève l’excès avec un papier absorbant. Je mets ensuite un peu de farine et le tour est joué ! Il faut aussi évidemment enlever l’excès de farine en tapant sur la plaque à l’envers. Dans du silicone noir, il n’y a besoin de rien du tout.
Versez la pâte au 3/4 de la hauteur de votre moule.
Enfournez 13-14 minutes. On voit ici les madeleines en cours de cuisson.
Et voilà, elles sont prêtes !
Avec un moule dur (à la différence des moules en silicone noir professionnel) il faut laisser les madeleines 2 minutes à leur place avant de les démouler.
Avec ce moule, on dirait des petits gâteaux japonais.
Elles seront meilleures bien tiédis ou froides. Gardez-les dans une boite hermétique.
