Je vous présente mon dernier né de la famille des cakes. Un cake riche et à la pâte dense qui contraste parfaitement avec la tendreté des poires et le croquant des noix. Avec un soupçon de miel et de cannelle, ce cake vous confirmera que nous sommes bien en automne ! J’ai mis au point ce gâteau pour que la pâte soit riche, mais si vous préférez une pâte plus légère, ajoutez simplement de la levure chimique ou battez les blancs en neige. Je vous propose également toute une variété de cakes sur mon blog de cuisine, et vous trouverez plusieurs sortes de textures. Si celui-ci parait plus dense, c’est vraiment un choix de ma part ! Je voulais m’approcher plus du cake ultime au citron. Et pour changer, je l’ai fait cuire dans un moule à bûche: on sent les fêtes qui s’approchent…
Faites fondre le beurre demi-sel, ajoutez le sucre blond et la vanille.
Ajoutez la cannelle et le miel.
Mélangez bien puis cassez-y les œufs.
Mélangez de nouveau sans insister puis versez la farine.
Mélangez, ajoutez les noix cassées en morceaux.
Puis les poires épluchées et coupées en morceaux. Pour ma recette, j’ai mis des poires comices bien tendres et juteuses.
Versez la pâte dans un moule à cake préalablement graissé (bombe de démoulage) ou beurré et fariné.Pour changer, j’ai pris un moule à bûche ! Si vous faites ma recette comme indiquée ici, vous pouvez laisser 1,5cm de place en haut du moule car la pâte ne gonflera que très peu. En revanche, si vous montes les blancs en neige ou que vous mettez de la levure chimique, ne remplissez votre moule à cake qu’aux 2/3.
Faites cuire 1h à 180°C. Vérifiez la cuisson en y plantant un couteau. La lame doit ressortir sèche.
Démoulez et laissez refroidir sur une grille à pâtisserie.
Dégustez tiède ou froid ! Si vous voulez un cake un peu plus léger, ajoutez un peu de levure chimique: 1/2 cuillerée à café dans la pâte suffira.
