C’est assez amusant de voir que le panais, on aime ou on déteste, mais il laisse rarement indifférent. Avec son goût unique, il est parfait pour les soirées automnales. Pour la consistance, c’est à vous de voir. Vous pourrez ajouter plus ou moins d’eau pour avoir un velouté plus ou moins épais.
Épluchez la pomme de terre et l’oignon et demi. Placez le tout dans une cocotte ou une grande casserole.
Épluchez les panais exactement comme des carottes.
Coupez-les en morceaux.
Mettez-les tous dans la casserole avec le beurre demi-sel.
Faites cuire 5-7 minutes sans colorer, juste pour les faire suer un peu.
Versez 1,5 litre d’eau.
Faites chauffer puis laissez cuire 15 minutes sous pression si vous utilisez une cocotte minute ou 35 minutes avec un couvercle sans pression.
Avec un mixeur plongeant, réduisez le tout en purée.
Versez la crème, puis ajoutez de l’eau jusqu’à obtenir la consistance désirée. Cela dépend si vous voulez un velouté épais ou contraire une soupe assez fluide.
À déguster très chaud avec pourquoi pas des croûtons, ou des petits morceaux de chorizo revenus à la poêle.
