Je vous ai déjà publié la recette des pralines (recette ICI), des pralines thaïlandaises (recette LÀ) et du praliné (recette LÀ-BAS)! Aujourd’hui je vais au plus simple et je tenais à vous publier ma recette de petits « cailloux ». Très rapides à préparer, avec une odeur savoureuse qui va s’échapper de la cuisine, ces cailloux vont être vite dévorés après le repas pendant les vacances! J’ai encore deux recettes de « presque-pralines » que je vais vous publier, mais celle-ci me tient à coeur car premièrement c’est très bon, ensuite comme je l’ai dit c’est très rapide et cela permet d’approcher très facilement un travail du sucre. Et le goût est très différent des pralines classiques et l’aspect est plus brut. À essayer très vite!
Mettre 180 (sur les 300g) de sucre et une cuillerée à café de cannelle dans un large poêle.
Mélanger.
Ajouter 30 à 40g d’eau, juste de quoi imbiber le sucre.
Mettre sur feu modéré. Le mélange va bouillir.
Ajouter les amandes.
Bien mélanger et cuire pour avoir de gros bouillons. Toujours mélanger avec une cuiller en bois.
Le tout va sabler. C’est à dire que le sucre va cristalliser. Mes élèves de cours vont ici reconnaitre cette étape que l’on en veut pas dans le sirop des macarons! Mais ici, c’est au contraire ce qu’il faut!
Le sucre cristallise totalement. Verser les amandes dans un récipient.
Ajouter le reste de sucre (normalement 120g si on suit bien!) et la demie cuillerée à café de cannelle.
Ajouter un peu et porter à gros bouillons.
Quand on voit que le sucre est prêt à recristalliser, ajouter les amandes.
Bien enrober de sucre toutes les amandes. Il y a donc maintenant une couche plus épaisse de sucre et c’est ce que l’on souhaite.
Le sucre va cristalliser de nouveau et sécher.
Verser dans un plat et laisser refroidir avant d’engloutir!
