Des brochettes de poulet mariné que l’on trempe dans une délicieuse sauce satay maison à base de lait de coco, cacahuètes et tamarin. J’ai en effet trouvé cette recette il y a longtemps, bien avant de commencer ce blog et je ne sais plus où je l’ai trouvée, alors merci de vous faire connaitre pour que je mette le lien vers le blog d’origine!
Mettre le sucre, la pâte de curry rouge, le nuoc nam et le tamarin dans un bol et bien mélanger.
Ajouter le lait de coco petit à petit pour bien dissoudre la pâte de curry. Mettre dans une casserole sur feu doux et chauffer jusqu’à ébullition.
Ajouter les cacahuètes grillées non salées réduites en poudre dans la sauce et bien mélanger. Laisser bouillir 3-4 minutes pour épaissir un peu la sauce. Arrêter le feu et réserver.
Couper les blancs en quatre dans la longueur pour obtenir des lanières.
Préparer la marinade du poulet. Mélanger les épices et le sucre.
Délayer avec le lait de coco. Ajouter les blancs de poulet et laisser mariner au moins 3 heures au frais.
Mettre une lanière de poulet par brochette en bois. Si les brochettes en bois sont trop longues, on peut les couper avec un pince coupante.
Cuire les brochettes soit au barbecue, soit au four à 240°C 15 min (plus ou moins, il faut surveiller) en retournant à mi cuisson. Servir avec la sauce satay bien chaude (la remettre à bouillir sur feu doux) et tremper les morceaux de poulet dans la sauce…!
