Un jour, une amie de ma mère, Brigitte, m'a fait goûter ces sablés que j'ai tout de suite adorés. Elle a gentiment accepté de me transmettre sa recette dans laquelle j'ai juste ajouté des amandes effilées. Le résultat est parfait et je rêve encore de mordre dans ces sablés croquants. Ils ne pas trop sucrés et laissent toute la place à la saveur réconfortante du chocolat. Avec leurs gros"chunks", du cacao en poudre non sucré et une pointe de sel, je suis persuadé que vous allez vite les adopter !
Mélangez les beurres et les sucres ensemble jusqu'à avoir une consistance crémeuse. Dans un autre récipient, mélangez la farine, le cacao non sucré et le bicarbonate de sodium. Tamisez le tout. Versez cette poudre sur la crème précédemment obtenue.Mélangez de nouveau (avec la feuille de votre batteur si vous avez un) jusqu'à ce que vous ayez une pâte qui s'agglomère. N'insistez pas plus !
Vous pouvez mettre des pépites de chocolat, ou alors couper des "chunks". C'est ce que j'ai fait avec une tablette de chocolat pas trop fort (55%).
Versez les chunks et les amandes effilées dans la cuve. Mélangez de nouveau jusqu'à avoir une pâte, sans pour autant insister. Roulez la pâte en boudin de 5cm de diamètre. Emballez celui-ci dans du film étirable et mettez-le au frais au moins 1H30.
Coupez ensuite des tranches de 1cm d’épaisseur. Le plus dur est de bien couper sans casser la pâte. Si la tranche se fait mal et que les chunks brisent le sablé, reconstituez-le. À la cuisson, le problème sera résolu ! Placez 12 sablés par plaque garnie de papier sulfurisé.
Enfournez et laissez cuire 14 minutes à 180°C.
Faites de même pour la deuxième fournée et laissez-les refroidir sur une grille à pâtisserie avant de les ranger dans une boite hermétique.
