Ce plat de pâtes, typique de Venise est une recette très simple à faire chez soi. Des oignons, des anchois, de la bonne huile d'olive, des pâtes et c'est tout ! Le plus dur, si l'on veut les avoir exactement comme à Venise, c'est de trouver les fameuses pâtes "bigoli". Je les ai rapportées de Venise, mais on peut sans problème, les remplacer par des spaghetti de gros diamètre.
Versez 4 cuillerées à soupe d’huile d’olive dans une poêle sur feu modéré.
Mettes les oignons à cuire, mais sans jamais les faire dorer. Il faut mélanger régulièrement sur feu doux.
Au bout de 5 minutes, versez un peu d’eau et mettez un couvercle pour laisser cuire les oignons à l’étouffée.
Quand les oignons sont bien cuits, coupez les filets d’anchois en morceaux et ajoutez-les dans la poêle.
Les anchois vont se dissoudre dans le jus des oignons et donner une sauce très parfumée. Salez (peu car les anchois sont salées) et poivrez légèrement.
Pour les pâtes, j’ai pris des « bigoli » à Venise dans un magasin au rayon frais. Vous pouvez très bien prendre des pâtes différentes, comme des spaghettis larges, car celles-ci sont quasi impossibles à trouver chez nous.
Faites cuire les pâtes à l’eau bouillante salée le temps indiqué.
Le contenu de la poêle ne doit pas être sec, il doit rester un peu d’eau dans le fond. Ajoutez les pâtes égouttées et refaites chauffer le tout sur feu doux pour bien envelopper les pâtes de sauce.
Ajoutez à l’envie quelques morceaux d’anchois et un peu de persil finement ciselé. Servez sans attendre.
