Une recette de raviolis maison, je ne dis jamais non. D'avance je vous réponds : oui bien sûr, on peut se passer de ce moule pour réaliser cette recette. D'autant que les raviolis perdent de leur superbe une fois cuits ! Je vous propose une version au saumon cuit, saumon fumé, aneth et ricotta. La farce peut d'ailleurs se déguster telle quelle sur du pain, un peu comme des rillettes de saumon.
Faites cuire le saumon à l’eau bouillante pendant environ 7-8 minutes. Égouttez-le, puis laissez-le refroidir totalement avant de le couper en petits morceaux.
Coupez le saumon fumé de la même façon.
Versez dans un récipient avec la ricotta et l’aneth finement haché. Salez et poivrez à votre goût. Mélangez, c’est prêt.
Préparez votre pâte aux œufs frais (recette ICI) puis étalez-la au laminoir jusqu’au chiffre 3.
Farinez un petit moule en bois. On peut faire ces raviolis sans moule bien sûr !
Posez un morceau de pâte laminée sur le moule, appuyez au niveau des cavités puis pressez un peu la pâte dans les motifs.
Versez de la farce au saumon.
Humidifiez légèrement la pâte.
Puis posez un autre morceau de pâte sur le dessus pour refermer.
Pressez un peu la pâte de nouveau au niveau des motifs, puis démoulez. Coupez les raviolis, ici avec une roulette dentelée.
Farinez bien les raviolis pour éviter qu’ils ne collent par la suite.
