Versez la crème dans une poêle et râpez finement le zeste des citrons verts. Faites chauffer sur feu doux. Versez l’aneth finement ciselé dans la crème.
Salez, poivrez et ajoutez une cuillerée à soupe d’huile d’olive. Faites cuire une ou deux minutes pour que la crème s’épaississe.
Pendant ce temps, faites cuire les raviolis l’eau bouillante. Difficile de vous donner un temps de cuisson, car tout dépend du temps de séchage de la pâte et de son épaisseur. Mais en gros, 2-3 minutes.
Quand les raviolis sont cuits, posez-les dans la sauce légèrement épaissie.
Si vous mettez de la poutargue, épluchez-la comme un saucisson, puis coupez-la très finement.
Servez les raviolis sans attendre, parsemés de quelques copeaux de poutargue.
