Estou a ficar um pouco à frente da estação ao fazer esta receita, mas quando me deparei com um belo molho de espargos, quis fazer este prato. Esta massa deliciosa, cozida al dente, com um pesto de rebentos de espinafres, pistache e pecorino, é perfeita com espargos apenas dourados em azeite de oliva. Um prato brilhante que é um convite para os belos dias que finalmente estão a chegar!
Receitas para TROFIES COM PISTACHE PESTO, PECORINO E SPINACH POUSSES, GREEN ASPARAGUS :
Para 4-5 pessoas:
500g trofie
1 ramo de espargos verdes
50g de pistácios
rebento de espinafre
pecorino
30cl de creme completo.
sal, pimenta
Espinafres e pistachio pesto :
50g pistácios brutos
1 dente pequeno de alho
Azeite de 60g
50g de queijo pecorino
Rebentos de espinafres de 50g
Instruções:
Comece por preparar os espinafres, pecorino e pistachio pesto.
Colocar os pistácios crus, pecorino, dente de alho e azeite num pequeno liquidificador.
Misture bem.
Acrescentar os rebentos de espinafres.
Misturar novamente para obter uma pasta homogénea.
Lavar os espargos. Cortá-los em secções, removendo a base fibrosa. Verter um pouco de azeite para uma frigideira em lume forte. Acrescentar as peças de espargos. Fritá-los durante 7-8 minutos.
Esta é a massa trofie.
Cozinhar durante um minuto a menos do que o tempo al dente. Esvaziar bem e arrefecer em água fria. Drenar novamente.
Quando tudo estiver pronto, deitar duas colheres de sopa de pesto em pleno creme em calor moderado. Acrescentar sal e pimenta.
Ferver e misturar bem.
Verter a massa e misturar, baixar o calor.
Acrescentar os pistácios, rebentos de espinafres rasgados e espargos salteados em azeite.
Verter em 4 pratos. Polvilhar com pistácios, rebentos de espinafres e queijo pecorino ralado. Adicione uma pitada de pimenta recém moída e sirva sem demora!
