Uma tarte original! Uma mistura de creme de amêndoa e pistachio, coberta com meio pêssego. O resultado é bastante divertido de servir! Achei mais fácil colocar os pêssegos sobre um quadrado do que sobre um círculo!
Receita de tarte de pêssego para 9 pessoas:
Massa doce: -210g de farinha -35g de açúcar de confeiteiro -125g de manteiga mole -25g de pó de amêndoa -vanila em pó -50g de ovo
Creme de Amêndoa e Pistachio: -100g de açúcar de confeiteiro -100g de pó de amêndoa -100g de manteiga derretida -10g de farinha de milho -1 ovo -40cl de kirsch chique -60g de pasta de pistachio caseira
-9 metades de pêssego em xarope ou, se na estação do ano, fresco! -tintura líquida vermelha (opcional!!)
Preparar a massa doce. Colocar todos os ingredientes excepto o ovo numa tigela ou na tigela de um processador de alimentos.
Bater com a folha do processador de alimentos (este é o K) até que a manteiga seja incorporada.
Adicionar o ovo previamente batido nesta altura.
Ligue novamente só para incorporar o ovo batido, mas não mais!
Colocar a massa sobre um pedaço de papel vegetal.
Colocar outra folha em cima da massa e enrolar com um rolo de massa até uma espessura de cerca de 2-3mm. Desta forma, não é adicionada farinha extra e a superfície de trabalho e o rolo permanecem limpos.
Tentar, tanto quanto possível, regularizar a forma num quadrado.
Arrefecer a massa durante 10-15 minutos.
Colocar a massa no círculo quadrado (é isso possível??) de 20X20X2cm. Cortar uma fenda na massa nos quatro cantos da praça.
Preencher o molde. O entalhe vai ajudar a colocar a massa e a colocá-la bem!
Cortar o excesso de massa com uma faca.
Portanto, temos um quadrado cheio de massa.
Picar a massa com um garfo e arrefecê-la até que o creme de pistache de amêndoa esteja pronto.

Preparar o creme de amêndoa de pistachio.
Colocar a amêndoa em pó, açúcar em pó, farinha de milho e manteiga mole numa tigela.
Misturar e adicionar o ovo.
Misturar bem.
Adicionar a pasta caseira de pistachio.
Adicionar os 40ml de kirsch.
Mexer bem para obter uma textura homogénea.
Pré-aquecer o forno a 180°C.
Verter o creme para dentro do molde forrado com massa.
Tentar suavizar o mais possível.
Depois cozer durante 35 minutos. Pode demorar mais tempo, dependendo do seu forno. Mas a massa deve ser castanha dourada e o topo deve ser castanho dourado.
Depois de retirar do forno, pincelar o xarope da lata que contém os pêssegos em xarope. Isto irá humedecer o bolo.
Colocar as 9 metades de pêssego sobre a tarte arrefecida.
Achei os meus pêssegos um pouco amarelos demais. A tarte parecia triste…! Então dei-lhes uma boa aparência com um pincel mergulhado em corante alimentar vermelho líquido, diluído num pouco de água, depois pintei todos os pêssegos! Isto é opcional, mas dá uma cor agradável! Naturalmente, isto é desnecessário se usar pêssegos frescos na época!
Arrefecer durante pelo menos 3 horas antes de servir.
