Ainda é a época, por isso estou a gostar. O pesto do alho selvagem é totalmente irresistível! Ponho-o em todo o lado, em massa, lentilhas de coral, em pão… Muito obrigado mais uma vez ao meu amigo Flore que apanhou muito alho selvagem para mim. Não confundir com o lírio do vale (as folhas são muito semelhantes!).
Pesto de alho de urso :
150g de alho selvagem
125g de azeite
100g de pinhões ou outros frutos secos (amêndoas, avelãs, etc.)
100g de queijo parmesão
5g de sal
Aqui está o alho selvagem. Se o colher, certifique-se de que é alho selvagem e não uma planta imprópria para o consumo!
Lavar e secar o alho (incluindo as flores) e picá-lo grosseiramente. Colocar tudo num pequeno misturador com o azeite.
Misturar com um puré fino.
Torrar os pinhões numa frigideira e adicioná-los ao liquidificador.
Não se esqueça do sal.
Termine com o queijo parmesão em pequenos pedaços para tornar o misturador mais fácil de usar!
Misturamos e já acabou!
Pode guardá-lo durante uma semana no frigorífico e congelá-lo sem qualquer problema.
