Uma receita ultra-simples, mas tão saborosa quanto você poderia desejar. Aqui está um pesto de alcachofra, feito com corações de alcachofra, parmesão, castanhas de caju torradas, alho e azeite de oliva! Uma delícia absoluta em torradas para um aperitivo saboroso, ou até mesmo como base para uma pizza, no lugar de molho de tomate ou pesto verde, e depois adicionado como você desejar!
Pesto para 4 pessoas :
400 g de corações de alcachofra crus (congelados são perfeitos!)
160 g de castanhas de caju torradas sem sal (se forem salgadas, não coloque o sal!)
65 g de azeite de oliva
100 g de queijo parmesão ou Grana Padano
2 dentes de alho
sal, pimenta
Cozinhe os fundos de alcachofra no vapor por 14 minutos. Usei bases congeladas aqui, que são perfeitas para esta receita em que são misturadas.
Ao final desse tempo, passe-os por água fria para interromper o cozimento.
Aqui estão os ingredientes.
Descasque os dentes de alho, pique o queijo e coloque todos os ingredientes no liquidificador.
Até que você obtenha uma textura suave e cremosa.
Sirva no pão ou como base de pizza (em vez de um pesto tradicional). Você pode mantê-lo em um local fresco, colocando uma camada de azeite de oliva na superfície para protegê-lo da oxidação e, em seguida, esticar o filme para impedir a entrada de odores da geladeira.
Mettez les fonds d’artichauts à cuire 14 minutes à la vapeur. J’ai pris ici des fonds congelés, parfaits dans cette recette où on les mixe.
Au bout de ce temps, passez-les sous l’eau froide pour stopper la cuisson.
Épluchez les gousses d’ail, coupez le fromage en morceaux et placez tous les ingrédients dans le mixeur jusqu’à obtenir une texture crémeuse homogène.
Servez sur du pain, ou en fond de pizza (à la place d’un pesto classique). Vous pouvez le garder au frais, en mettant une couche d’huile d’olive sur la surface pour protéger de l’oxydation, puis un film étirable pour empêcher les odeurs du réfrigérateur.
