Ainda me estou a divertir criando receitas para o meu parceiro Alvalle (duas receitas até ao final de Agosto!)! Imagine massa folhada com recheio de chouriço picante e uma pesto doce vermelha com tomate seco ao sol e caju assado! Uma mistura picante e deliciosa, servida em massa folhada estaladiça. Uma combinação perfeita que será destacada pela nossa sopa de Alvalle Frio de Tomate e Ervas. Frio quente, apimentado, doce, crocante, esta receita despertará o paladar de todos os amantes de comida como eu!
Receita para cerca de dez pastelaria folhada “média” ou vinte “minis”:
-1 tijolo de sopa fria Alvalle de tomate e beterraba
-1 rolo de massa folhada
-2 colheres de sopa de azeite de oliva
-1 cebola, picada
-1 tomate, descascado, semeado e cortado em pequenos pedaços
-1 colher de sopa de pasta de tomate
-50g de castanhas de caju (assadas e salgadas!)
-100g de tomate seco marinado em azeite
-120g de chouriço forte
Para esta receita, não há necessidade de se preocupar com uma massa folhada “caseira”! Um rolo comercial (boa qualidade, “manteiga pura”!!). Se quer realmente ser um purista, a minha receita é AQUI! Basta cortar com um cortador de biscoitos do tamanho que desejar, 4-5cm ou mesmo 2! Depois corte a massa folhada pressionando com força e virando para selar as bordas dos futuros folhados, como se o círculo estivesse aparafusado!
Picar levemente a massa.
Cozer durante 13 a 15 minutos a 190°C. As couves são bem infladas no meio e seladas na borda, tudo graças à nossa técnica!
Preparar o recheio: aquecer o óleo numa frigideira. Acrescentar a cebola picada.
Adicionar o tomate descascado, sem sementes e picado.
Adicione um pouco de água para ajudar o processo de cozedura (não importa quanto, a água evaporará, mas também não um litro! 50g talvez!).
Acrescentar a pasta de tomate.
Cortar os tomates secos (marinados em azeite de oliva).
Adicioná-lo ao processo de cozedura.
Colocar as castanhas de caju com um pouco de água (50g) num pequeno misturador e puré.
Acrescentar este “creme” de caju à mistura.
Misturar bem e continuar a cozinhar em lume brando.
Descascar a pele do chouriço e cortar a quantidade (120g ou mais!) em pequenos pedaços.
Acrescentar o chouriço.
Cozinhar até que o recheio seja espesso. Experimente para verificar o tempero.
Guarneça os folhados cortados na espessura e sirva com um copo de sopa fria Alvalle de Tomate e Ervas!
