Há algum tempo que ando de olho neste molde gigante de madeleína da Matfer. Não sabia onde encontrá-lo e tropeçei nele. Por isso, saltei-lhe em cima! Essa é a primeira razão para esta receita. A outra é que eu queria encontrar o sabor das madeleinas industriais. Eu sei que é uma pena, mas acho que as madeleines comerciais são por vezes muito saborosas. E no entanto nunca os compro, é quando me são oferecidos que os acho muito bons. Aqui tentei replicar a textura e o sabor de uma das marcas mais conhecidas. Usei um aroma de amêndoa amarga para o sabor e é delicioso! Esta madeleine gigante (ou a versão clássica em tamanho real!) está pronta para ir ao forno em menos de 5 minutos e enche a casa de um cheiro tentador.
Receita para uma madeleína gigante (molde de madeleína mate) ou 2 dúzias de madeleínas:
175g de farinha
2,5g de fermento em pó (isto é muito pouco e funciona muito bem)
1/4 colher de chá de sal
140g de açúcar
100g de óleo (óleo de colza para cozinhar), ou manteiga derretida
80g de ovo
25g de leite
10g de aroma de amêndoa amarga (por uma vez Vahiné serve!!!)
Colocar a farinha, fermento, sal, óleo e açúcar numa tigela.
Misturar brevemente e depois adicionar o leite e os 80g de ovo.
Misturar com uma pasta lisa e sem grumos. Finalmente, deitar o aroma de amêndoa amarga e misturar bem.
Este é o molde gigante madeleine da Matfer. Lubrifico-a com o agente desmoldante ou manteiga derretida e depois dou-lhe uma ligeira farinha. Mas pode passar sem ele e fazer madeleines de tamanho normal.
Cozer durante 50 minutos a 160°C para a madeleína gigante ou 15 minutos para as pequenas madeleínas.
É isso mesmo! Deixar arrefecer durante 5 a 10 minutos antes de retirar do molde.
