O clássico que todos adoram, o favorito dos macaroon! É verdade que com o seu centro de caramelo macio realçado pelo sabor da manteiga salgada que excita as papilas gustativas, este macaroon é um verdadeiro sucesso!
Receita de Macaroons de Manteiga Salgada de Caramelo.

O recheio de caramelo:
-150g de açúcar pilão
-80g de xarope de glucose
-15cl creme completo
-170g de manteiga salgada (muito macia)
Comece com uma receita de macaroons adicionando cor castanha de café ao merengue italiano para obter uma bela cor de caramelo! A ponta de uma faca é suficiente, mas depende do indivíduo.
Aqui estão algumas fotos para vos recordar os passos! Cozer como indicado, 14 minutos a 145°C ou dependendo da potência do forno utilizado!
Trim:
Colocar o açúcar e o xarope de glucose numa caçarola em lume brando com um pouco de água.
Obter um caramelo bastante forte porque a nata e a manteiga irão aliviá-lo. Aqueça o creme no microondas, para evitar salpicos (o creme frio faria o caramelo enlouquecer!). Adicionar o creme lentamente, mexendo constantemente.
Reaqueça o creme para derreter todo o açúcar.
Verter o caramelo resultante para uma tigela e deixar arrefecer.
Adicionar 70g (dos 170g) de manteiga salgada. Misturar bem e deixar de pé. Se por acaso o caramelo se cristalizar (isto aconteceu comigo!), volte a pô-lo no microondas durante um ou dois minutos para o derreter. Misturar bem para incorporar a manteiga.
Adicione os restantes 100g de manteiga e bata com uma batedeira eléctrica para arejá-la.
Bater em duas colheres de sopa de caramelo, depois colher no resto.
Colocar o enchimento de caramelo num saco de tubagem com um bocal de 8mm. Ordene os macaroons por tamanho e escolha-os de modo a que duas conchas coincidam! Não há necessidade disso, se forem idênticos, claro! Encher todas as outras conchas e fechar o macaroon.
Coloque os macaroons numa caixa e deixe no frigorífico durante uma ou duas noites para criar osmose com o macaroon, que irá absorver a humidade ambiente e ganhar toda a sua suavidade!
