Aqui está uma deliciosa receita de gelado de pistachio. Um gelado realmente cremoso! Para isso precisará de pasta de pistachio… Realmente divino com o Pistachio Macaroon Cake!
Receita de gelado de pistachio para 1 litro:
525g de leite semi-desnatado -25g de leite em pó integral -90g de pasta de pistcahe (clique sobre o nome para obter a receita) -150g de creme líquido -140g de açúcar -50g de glucose atomizada (ou glucose anidra pura nas farmácias) -4 gemas de ovo -3g de estabilizador de gelo (super-neutrose)
Colocar a pasta de pistachio, glucose e o leite em pó integral numa tigela.
Misturar o estabilizador com o açúcar numa tigela separada.
A dica de Bernard Pode fazer este gelado sem a super neutrose, ele será igualmente delicioso! No entanto, com este, será ainda mais cremoso e resistente ao derretimento!
Adicionar o creme líquido à mistura da pasta de pistachio. Misturar bem e adicionar o leite.
Colocar a frigideira em lume médio. Mexer constantemente com um batedor e verificar a temperatura com um termómetro.
Adicionar a mistura açúcar/estabilizador a 35°C. Misturar bem.
Depois as gemas de ovo a 40°C.
Enquanto se mexe constantemente, levar a mistura a 85°C. Tal como um creme de ovos. Deixar arrefecer e depois armazenar num local fresco durante 2 horas.
Se necessário, misturar a mistura com uma varinha ou misturadora, depois processar numa máquina de gelados. Colocar num frasco e congelar durante pelo menos 3 ou 4 horas antes de comer.
