إليكم وصفة آيس كريم الفستق اللذيذة. حقا الآيس كريم دسم! سوف تحتاج إلى معجون الفستق لهذا النوع … إلهي حقًا مع كعكة الماكرون بالفستق!
وصفة لأيس كريم الفستق 1 لتر:
-525 جرام حليب نصف منزوع الدسم – 25 جرام حليب بودرة كامل الدسم – 90 جرام من معجون الفستق (انقر فوق الاسم للحصول على الوصفة) -150 جم من الكريمة السائلة – 140 جرام سكر – 50 جم من الجلوكوز المتراكم (أو الجلوكوز اللامائي النقي في الصيدليات) -4 صفار بيض -3 جرام من مثبت الثلج (superneutrosis)
نضع معجون الفستق الحلبي ذرات الجلوكوز ومسحوق الحليب كامل الدسم في وعاء.
اخلطي المثبت مع السكر في وعاء منفصل آخر.
نصيحة برنارد : يمكنك صنع هذا الآيس كريم بدون النيوتروز الفائق ، سيكون لذيذًا تمامًا! ولكن مع هذا ، سيكون أكثر دسمًا وسيقاوم الذوبان بشكل أفضل!
أضيفي الكريما السائلة إلى خليط معجون الفستق. اخلطي جيداً ثم أضيفي الحليب.
ضع القدر على نار متوسطة. اخفقي باستمرار وافحصي درجة الحرارة بميزان حرارة.
أضف مزيج السكر / المثبت عند 35 درجة مئوية. خلط جيد.
ثم صفار البيض عند 40 درجة مئوية.
أثناء الخلط باستمرار ، أحضر المستحضر إلى 85 درجة مئوية. بالضبط مثل الكاسترد. اتركيها لتبرد ثم احفظيها في الثلاجة لمدة ساعتين.
اخلطي المستحضر حسب الحاجة باستخدام خلاط أو خلاط ، ثم اخفقي في صانعة الآيس كريم. ضعيها في وعاء ثم خزنيها في الفريزر لمدة 3 أو 4 ساعات على الأقل قبل تناولها.
