Aquí tienes una deliciosa receta de helado de pistacho. ¡Un helado realmente cremoso! Para esto necesitarás pasta de pistacho… ¡Realmente divino con la tarta de macarrones de pistacho!
Receta de helado de pistacho para 1 litro:
525 g de leche semidesnatada -25g de leche entera en polvo -90g de Pasta de pistón (haga clic en el nombre para obtener la receta) -150g de nata líquida -140g de azúcar -50g de glucosa atomizada (o glucosa anhidra pura en farmacias) -4 yemas de huevo -3g de estabilizador de hielo (superneutrose)
Poner la pasta de pistacho, glucosa y la leche entera en polvo en un bol.
Mezclar el estabilizador con el azúcar en un bol aparte.
El consejo de Bernard Puedes hacer este helado sin la superneutrosa, ¡será igual de delicioso! Sin embargo, con éste, será aún más cremoso y resistente a la fusión.
Añadir la nata líquida a la mezcla de pasta de pistacho. Mezclar bien y añadir la leche.
Poner la sartén a fuego medio. Remover constantemente con un batidor y comprobar la temperatura con un termómetro.
Añadir la mezcla de azúcar y estabilizador a 35°C. Mezclar bien.
A continuación, las yemas de huevo a 40°C.
Sin dejar de remover, llevar la mezcla a 85°C. Como un flan. Dejar enfriar y guardar en un lugar fresco durante 2 horas.
Si es necesario, mezcle la mezcla con una batidora de mano o una licuadora, y luego procésela en una heladora. Poner en un tarro y congelar durante al menos 3 o 4 horas antes de comer.
