Já passaram quase três anos desde que desenvolvi oAssassino e parece ter sido muito popular! Faço-as de vez em quando e tenho de admitir que as aprecio sempre. Há muito tempo que quero inventar uma versão ligeiramente diferente, para encontrar um irmão para ele de certa forma. Portanto, aqui está o Explosivo! Desta vez, a ênfase é ainda maior no caramelo de manteiga salgada. Um toque de canela, um pouco de chocolate branco e um punhado de amêndoa em pó e aqui está a mais recente adição à família! Ainda parecendo um queijo velho (!!!) este bolo pode ser comido fresco para ser mais firme, ou à temperatura ambiente para ser ainda mais derretido. E como sempre, uma pequena fatia é suficiente. Receita para o explosivo:
-190g de açúcar -125g de manteiga semi-salgada -1 colher de chá de flor de sal
-110g de creme completo -90g de chocolate branco -175g de ovo
-60g de pó de amêndoa -30g de farinha
-25g de vergeoise loira
-1 colher de chá de baunilha líquida
-1/8 colher de chá de canela em pó
Comece por colocar a manteiga, a flor de sal e o açúcar numa frigideira de fundo pesado. Adicionar um pouco de água (apenas o suficiente para encharcar um pouco o açúcar).
Derreter em calor moderado a alto, mexendo com uma colher de madeira.
A mistura irá espumar e começar a colorir. Deve alternar e mudar o calor em função do resultado que se vê na panela.
O caramelo será feito. Mexer bem para evitar que o fundo se queime.
Quando o caramelo tiver uma bela cor castanha, adicionar o creme líquido.
Cuidado com os possíveis salpicos. Primeiro adicionar um pouco de creme, depois misturar e depois adicionar o resto. Misturar bem.
Voltar ao calor para ferver e derreter quaisquer pedaços de açúcar ou caramelo restantes em pequenos pacotes.
Deixar arrefecer durante 5 minutos e depois adicionar o chocolate branco. Para esta receita, mais vale usar um bom chocolate como Cacao Barry ou Valrhona. Mexer para derreter todo o chocolate.
Numa tigela separada, misturar a amêndoa em pó e os 175g de ovos.
Adicionar a canela em pó e baunilha líquida.
Depois deitar a vergôntea e a farinha.
Verter o caramelo sobre a mistura de ovos.
Verter para uma lata de 16cm forrada com papel vegetal. Coloco um círculo de papel no fundo e uma faixa à volta do interior.
Colocar no forno pré-aquecido a 145°C durante 1 a 1h10. Quando se move o bolo, o centro deve ser colocado um pouco como uma geleia. Aqui pode ver o bolo directamente do forno.
E 5 minutos mais tarde. É subtil, mas pode ver-se que está a deflagrar, é bastante normal!
