Han pasado casi tres años desde que desarrollé elAssassin y parece que ha sido muy popular. Los hago de vez en cuando y debo admitir que los disfruto siempre. Llevo mucho tiempo queriendo hacer una versión ligeramente diferente, para encontrarle un hermano en cierto modo. ¡Así que aquí está el Explosivo! Esta vez el énfasis está en el caramelo de mantequilla salada. Un toque de canela, un poco de chocolate blanco y un puñado de polvo de almendra y ¡aquí está el último miembro de la familia! Todavía con aspecto de queso viejo (¡!) esta tarta se puede comer fresca para que esté más firme, o a temperatura ambiente para que sea aún más fundente. Receta para el explosivo:
-190g de azúcar -125g de mantequilla semi-salada -1 cucharadita de flor de sal
-110g de nata líquida -90g de chocolate blanco -175g de huevo
-60g de polvo de almendra -30g de harina
-25g de vergeoise rubia
-1 cucharadita de vainilla líquida
-1/8 de cucharadita de canela en polvo
Empiece poniendo la mantequilla, la flor de sal y el azúcar en una sartén de fondo grueso. Añade un chorrito de agua (lo justo para empapar un poco el azúcar).
Derretir a fuego moderado o alto, removiendo con una cuchara de madera.
La mezcla formará espuma y comenzará a colorear. Hay que alternar y modificar el fuego según el resultado que se observe en la sartén.
El caramelo estará hecho. Mezclar bien para evitar que se queme el fondo.
Cuando el caramelo tenga un bonito color marrón, añadir la nata líquida.
Cuidado con las posibles salpicaduras. Primero hay que añadir un poco de nata, luego mezclar y luego poner el resto. Mezclar bien.
Vuelva a ponerlo al fuego para que hierva y derrita los terrones de azúcar o caramelo que queden en pequeños paquetes.
Dejar enfriar 5 minutos y añadir el chocolate blanco. Para esta receta, es mejor utilizar un buen chocolate como Cacao Barry o Valrhona. Remover para fundir todo el chocolate.
En un recipiente aparte, mezclar la almendra en polvo y los 175 g de huevos.
Añadir la canela en polvo y la vainilla líquida.
A continuación, vierta la vergeoise y la harina.
Verter el caramelo sobre la mezcla de huevos.
Verter en un molde de 16 cm forrado con papel de horno. Puse un círculo de papel en el fondo y una tira alrededor del interior.
Introducir en el horno precalentado a 145°C durante 1 a 1h10. Al mover la tarta, el centro debe quedar un poco cuajado como una gelatina. Aquí puedes ver la tarta recién salida del horno.
Y 5 minutos después. Es sutil, pero puedes ver que se está desinflando, ¡es muy normal!
