Algures entre um bolo e uma mousse, esta sobremesa totalmente decadente não necessita de cozedura nem de farinha. Por conseguinte, está mais perto de uma espuma muito rica. Uma textura que se derrete instantaneamente na boca. É essencial fazer esta receita numa versão “em tamanho de mordida”! Ou numa terrina e cortado em fatias finas. Um prazer culpado, mas tão bom!
Receita para a decadência do chocolate:
-250g de chocolate preto
-190g de manteiga mole
-125g de açúcar de confeiteiro
-3 ovos
-1 colher de sopa de leite
-sel
Derreter a manteiga com o chocolate e o leite numa caldeira dupla ou no microondas.
Numa outra tigela, misturar o açúcar em pó e as gemas (duas na foto porque fiz a receita numa proporção menor).
Bater-lhes para branquear o mais possível.
Adicionar a mistura vitela-açúcar à manteiga de chocolate.
Bater as claras de ovo até ficarem firmes.
Acrescentar suavemente os brancos ao chocolate.
Verter a mistura para moldes ou para uma tigela. Utilizo moldes de silicone para esta receita, para depois os poder desmoldar.
Colocar o molde no frigorífico e depois, quando a textura estiver firme, colocar no congelador (para poder desmoldar, terá de congelar!) durante uma ou duas horas.
Uma hora antes de servir, mergulhar o molde durante alguns segundos em água quente .
Saiam suavemente.
Em seguida, polvilhar com açúcar de confeiteiro.
Servir refrigerado. A decadência derrete na sua boca!
