A medio camino entre una tarta y una mousse, este postre totalmente decadente no requiere cocción ni harina. Por lo tanto, está más cerca de una espuma muy rica. Una textura que se deshace al instante en la boca. Es imprescindible hacer esta receta en versión «bocado». O en una terrina y cortado en rodajas finas. Un placer culpable, ¡pero tan bueno!
Receta para la decadencia del chocolate:
-250g de chocolate negro
-190g de mantequilla blanda
-125g de azúcar glas
-3 huevos
-1 cucharada de leche
-sel
Derretir la mantequilla con el chocolate y la leche al baño María o en el microondas.
En otro bol, mezclar el azúcar glas y las yemas (dos en la foto porque hice la receta en menor proporción).
Bátalos para blanquearlos lo más posible.
Añadir la mezcla de yemas y azúcar a la mantequilla de chocolate.
Batir las claras a punto de nieve.
Añadir suavemente las claras al chocolate.
Verter la mezcla en moldes o en un bol. Para esta receta utilizo moldes de silicona, para poder desmoldarlos después.
Poner el molde en la nevera y luego, cuando la textura sea firme, meter en el congelador (para poder desmoldar, ¡habrá que congelar!) durante una o dos horas.
Una hora antes de servirlo, sumerja el molde durante unos segundos en agua caliente .
Gire suavemente hacia fuera.
A continuación, espolvorear con azúcar glas.
Servir frío. ¡La decadencia se derrite en la boca!
