Eu sei que as minhas receitas de cheesecake no meu blog de culinária têm sido muito populares entre um grande número dos meus leitores. Aposto que este vai assumir o controlo! Por uma vez, isto é um cheesecake sem bolos. Também lhe dou uma receita muito simples de coulis de maracujá de manga. Por isso, estou a avisá-lo agora mesmo, este bolo é rico, mas completamente viciante! A textura é rica e cremosa, tal como eu gosto, mas mantém-se perfeitamente unida apesar da falta de cozedura.
Receita para um molde de 24cm de diâmetro:
Base :
240g de bolachas
100g de manteiga semi-salgada
45g de vergeoise castanha
Creme :
700g de creme de queijo
300ml de creme completo
210g de chocolate branco
15g de açúcar
a raspa de meio limão, sem tratamento
1 vagem de baunilha
1 colher de chá de baunilha líquida
1,5g de ágar-ágar
15g de creme líquido
25g de água
Instruções:
Coloque as bolachas no seu liquidificador. Aqui tomei metade de bolachas de aveia e metade de espéculos.
Misturar finamente com a manteiga derretida e a vergeoise.
Alinhe a sua bandeja em forma de mola com uma borda removível no fundo. Também coloquei um pedaço de rhodoïd no bordo interior do molde. Isto fará com que seja muito fácil desmoldar o bolo.
Verter na base do biscoito.
Espalhar-se no fundo e na borda.
Verter o queijo creme, açúcar (15g), chocolate branco derretido, baunilha líquida e o interior da vagem, e a raspa do meio limão. Misture com a folha do seu processador de alimentos ou com uma espátula.
Derreter o ágar-ágar com os 25g de água e os 15g de natas.
Levar à ebulição enquanto se mexe.
Deitar imediatamente no queijo creme e misturar de novo muito bem. Raspar bem o fundo da panela com uma marioneta para recolher tudo.
Bater os 300g de nata cheia a uma nata batida muito firme.
Adicionar à mistura de creme de queijo e misturar sem deixar que se desfaça, como uma mousse de chocolate branco.
E é tudo!
Verter para dentro da lata sobre a base de pastelaria.
Espalhe cuidadosamente. Arrefecer durante pelo menos 4 horas, ou melhor ainda, durante a noite.
Para os coulis, descascar e cortar a manga.
Esvaziar o maracujá.
Verter a mistura para uma caçarola com um pouco de água.
Acrescentar uma colher de sopa de açúcar.
Cozinhar em lume brando.
Tudo isto deve ferver suavemente.
Pode-se adicionar um pouco de água para alcançar a consistência desejada. Também aqui esmaguei a manga com um garfo. Depois sair para arrefecer.
Retirar o anel do molde. O rhodoide é claramente visível aqui.
Retirar a aba do rhodoide para libertar o cheesecake. Tirar cuidadosamente o papel vegetal do forno.
Tudo o que resta é servi-lo com o coulis de manga-paixão! Para fazer boas fatias, mergulhe a sua faca em água quente para cada corte.
