Sé que mis recetas de tartas de queso en mi blog de cocina han sido muy populares entre un gran número de mis lectores. ¡Apuesto a que éste se impondrá! Por una vez, esta es una tarta de queso sin hornear. También os doy una receta muy sencilla de coulis de mango y fruta de la pasión. Así que te advierto ahora mismo, este pastel es rico, ¡pero completamente adictivo! La textura es rica y cremosa, justo como me gusta, pero se mantiene perfectamente a pesar de la falta de cocción.
Receta para un molde de 24 cm de diámetro:
Base :
240g de galletas
100 g de mantequilla semisalada
45g de vergeoise marrón
Crema :
700g de queso crema
300 ml de nata líquida
210 g de chocolate blanco
15g de azúcar
la cáscara de medio limón, sin tratar
1 vaina de vainilla
1 cucharadita de vainilla líquida
1,5g de agar-agar
15 g de nata líquida
25g de agua
Instrucciones:
Poner las galletas en la batidora. Aquí he tomado la mitad de galletas de avena y la mitad de espéculos.
Mezclar finamente con la mantequilla derretida y la vergeoise.
Forre su molde desmontable con un borde extraíble en el fondo. También puse un trozo de rodoïd en el borde interior del molde. Así será muy fácil desmoldar el pastel.
Verter la base de galletas.
Untar el fondo y el borde.
Verter el queso crema, el azúcar (15g), el chocolate blanco derretido, la vainilla líquida y el interior de la vaina, y la ralladura del medio limón. Mezclar con la hoja de su procesador de alimentos o con una espátula.
Derretir el agar-agar con los 25g de agua y los 15g de nata.
Llevar a ebullición sin dejar de remover.
Verter inmediatamente en la crema de queso y mezclar de nuevo muy bien. Raspe bien el fondo de la sartén con un marysee para recoger todo.
Batir los 300 g de nata entera hasta conseguir una nata montada muy firme.
Añadir a la mezcla de queso crema y mezclar sin dejar que se deshaga, como una mousse de chocolate blanco.
¡Y ahí lo tienes!
Verter en el molde sobre la base de hojaldre.
Extiende con cuidado. Enfriar durante al menos 4 horas, o mejor aún, toda la noche.
Para el coulis, pelar y trocear el mango.
Vacía la fruta de la pasión.
Verter la mezcla en un cazo con un poco de agua.
Añadir una cucharada de azúcar.
Cocinar a fuego lento.
El conjunto debe hervir suavemente.
Se puede añadir un poco de agua para conseguir la consistencia deseada. Aquí también aplasté el mango con un tenedor. A continuación, dejar enfriar.
Saque el anillo del molde. El rodoide es claramente visible aquí.
Retirar la solapa rodoide para liberar la tarta de queso. Despéguelo con cuidado del papel de hornear.
Sólo queda servirlo con el coulis de mango-pasión. Para hacer buenas rebanadas, sumerja el cuchillo en agua caliente para cada corte.
