Este é um grande clássico da cozinha americana! Datado do final do século XIX, provavelmente de Chicago, é uma espécie de bolo de chocolate sem fermento, por isso é bastante plano e ligeiramente cozido por baixo. Cortado em quadrados, o brownie é delicioso e derrete-se na boca. Tenho uma receita de brownie muito invulgar para si, com cacau em pó e manteiga escura. A sua textura é perfeitamente suave e liberta o cheiro das avelãs. Uma receita para tentar com urgência!
Receita para 16 porções de “Nut Brownie”:
-90g de manteiga mole -70g de manteiga com sal -270g de açúcar -80g de cacau em pó não adoçado (van houten) -1 colher de chá de baunilha líquida -2 colheres de chá de água -2 ovos grandes -60g de farinha -120g de nozes
Comente colocando as manteigas numa caçarola em calor moderado.
Derreter e ferver a manteiga.
Quando a manteiga começar a espumar sem fazer barulho, remover a frigideira do calor. A manteiga tornou-se “avelã”. Se o fundo da frigideira estiver um pouco torrado (não queimado!!), é ainda melhor.
Pesar juntos o cacau em pó e o açúcar.
Adicioná-los à frigideira (sem o calor).
Misturar bruscamente com um batedor.
Adicionar as duas colheres de chá de água e a baunilha líquida.
Misturar energicamente e deixar arrefecer durante 5 minutos.
Após 5 minutos, adicionar os ovos um de cada vez, mexendo de cada vez.
Quando a mistura for lisa, adicionar a farinha.
Misturar e depois adicionar as nozes.
Verter a massa para uma assadeira de 21 x 21 quadrados forrada com papel vegetal. Também pulverizo com spray antiaderente.
