Vou continuar com as sobremesas exóticas depois das tortas de manga! Na realidade, este bolo de coco surgiu por acidente. Quando quis fazer a pralina de coco para as tartes, estraguei inicialmente a minha primeira versão. Recebi uma massa macia caramelizada de coco . Em vez de o deitar fora, adicionei os ingredientes clássicos do bolo de forma aleatória e acabei com deliciosos bolos de coco com alguns pedaços de ananás caramelizado de baunilha por cima. É claro que se pode adicionar o ananás directamente à massa, mas pensei que seria mais agradável colocá-los por cima!
Receita para 5-6 pequenos bolos de coco:
-200g de coco ralado seco
-200g de açúcar -70g de água
-4 ovos
-40g de farinha
-45g de manteiga semi-salgada
-1 colher de chá de baunilha líquida
-1 ananás fresco
-1 vagem de baunilha
-40g de açúcar
-40g de manteiga semi-salgada
Colocar o açúcar e o coco seco numa frigideira.
Adicionar a água e colocar num calor moderado.
Mexer constantemente com uma colher. A mistura torna-se pastosa.
Pouco a pouco toda a coisa carameliza.
Pode deixá-lo caramelizar o mais possível sem se queimar. Colocar o coco numa tigela. Deixar arrefecer durante 20 minutos. Em seguida, adicionar o ovo.
Adicionar também a manteiga derretida e baunilha líquida.
Depois, finalmente, a farinha. Misturar bem para obter uma pasta homogénea.
Verter a massa em 5 moldes pequenos de 5 cm ou num molde grande de 20 cm.
Cozer durante 20 minutos a 170°C, mantendo-se atento ao tempo de cozedura.
Sair e arrefecer num suporte de arame.
Cortar o ananás fresco em pedaços. Se sobrar algum ananás, basta comê-lo!
Colocar o açúcar com a vanilina da vagem de baunilha numa frigideira .
Acrescentar um pouco de água e manteiga.
Marrom os pedaços de ananás.
Cozinhar até o açúcar caramelizar ligeiramente.
Organize os pedaços de ananás nos bolos de coco e desfrute!
