Los «Xia long bao» son pequeños raviolis chinos al vapor con un jugoso relleno de carne de cerdo que es el mismo que los bollos de Shanghai.
Receta de «Xiao long bao» (para 36 raviolis):
Para el relleno:
-30g de agua -300 g de lomo de cerdo picado
-5g de sal
-6g de azúcar
-3g de pimienta
-una cucharada de vino chino
-dos cucharadas de salsa de soja negra -15g de cebolla china en trozos pequeños -15g de jengibre picado finamente dos cucharadas de aceite de sésamo tostado
-180g de gelatina, cuajada y en trozos (ver enlace

Para la masa: -240g de harina -135ml de agua
Comienza poniendo la carne con los 30g de agua hasta que la carne la haya absorbido por completo. A continuación, preparar el relleno mezclando bien todos los ingredientes.
Poner la harina en una superficie de trabajo, cavar un pozo y verter el agua.
Comienza a amasar la masa con la palma de la mano, doblando y plegando la masa durante cinco minutos.
Después de 5 minutos, utilice un rodillo para seguir trabajando la masa, extendiéndola a lo largo. Dobla esta tira en tercios, gírala 90° y extiéndela de nuevo. Continuar este proceso durante otros 5 minutos.
Dividir en tres salchichas, luego cada salchicha en doce trozos iguales de masa.
Aplanar cada trozo de masa con la palma de la mano y luego con un rodillo.
Poner una cucharada de masa en cada disco así formado y cerrar cada riavoli. Yo creo que la foto es probablemente menos dolorosa que una larga explicación sobre el plegado.
Coloque los riavolis en una cesta de bambú y cuézalos al vapor durante 10 minutos.
Los «Xia long bao» se sirven con una salsa (mitad de vinagre balsámico, mitad de salsa de soja, con un poco de aceite de sésamo y tabasco) y, sobre todo, con palillos Y una cuchara para coger el jugo del interior.
