Xia long bao” são pequenos ravioli chineses cozidos a vapor com um recheio suculento de carne de porco que é o mesmo que os pãezinhos de Xangai.
Receita para “Xiao long bao” (para 36 raviólias):
Para o recheio:
-30g de água -300g de lombo de porco, picado
-5g de sal
-6g de açúcar
-3g de pimenta
-uma colher de sopa de vinho chinês

Para a massa: -240g de farinha -135ml de água
Comece por colocar a carne com os 30g de água até que a carne a tenha absorvido completamente. Depois preparar o recheio misturando bem todos os ingredientes.
Colocar a farinha numa superfície de trabalho, cavar um poço e deitar na água.
Comece a amassar a massa com a palma da mão, dobrando e dobrando a massa durante cinco minutos.
