El turrón no es un dulce tan difícil de hacer si se tienen los ingredientes. Jarabe de glucosa, fondant y almendras picadas. Se pueden utilizar almendras fileteadas para obtener un turrón ligeramente más fino. El jarabe de glucosa evita que el conjunto se cristalice. Si las herramientas de corte están aceitadas, se puede dar la forma deseada al nougatine.
Receta de turrón:
-360 g de almendras picadas o fileteadas
-300g de jarabe de glucosa
-500g de fondant blanco
45g de mantequilla medio salada
Empezar por colorear las almendras en el horno durante 10 minutos a 150°C. Remover regularmente. En la foto se puede ver que apenas están tostados. (¡el flash no ayuda!)
Poner el jarabe de glucosa y el fondant en un cazo a fuego lento. El fondant se derretirá. Para que lo sepas, el jarabe de glucosa es súper espeso, ¡es divertido de ver! ¡De hecho, se utilizó mezclado con otra cosa para servir como baba de monstruo en la película Alien!
La mezcla empezará a hervir, puedes remover de vez en cuando.
Deja que se caramelice. El caramelo debe ser de color marrón oscuro porque las almendras y la mantequilla lo aclararán.
Añadir las almendras coloreadas y mezclar bien.
A continuación, añada la mantequilla salada.
Remover bien, todavía a fuego lento, hasta que el turrón se despegue del fondo de la sartén.
A continuación, viértalo en un mármol aceitado o en un silpat (tapete siliconado) o en una hoja de papel siliconado sobre una superficie resistente al calor.
Estirar con un rodillo aceitado y cortar el turrón en la forma deseada con un cuchillo aceitado.
El turrón debe guardarse en una caja hermética porque la humedad es fatal. ¡Puedes hacer copas de helado de nougatine y expositores de tartas!
