Receta de trufas de chocolate clásicas (para unas 100 trufas pequeñas):
-400g de chocolate negro -60g de chocolate con leche -350g de nata líquida -30g de mantequilla blanda -cacao en polvo sin azúcar
Calentar la nata a fuego lento.
Poner el chocolate en un bol. Aquí he hecho una mezcla de chocolate con leche y chocolate negro.
Verter la nata cuando esté cociendo a fuego lento. Rocíe suavemente sobre el chocolate.
Remover empezando por el centro y trabajando hacia fuera.
Añadir la mantequilla y mezclar bien.
Verter todo el ganache en un marco de 20X20X2. El marco se coloca en un tapete de cocción que a su vez se coloca en una placa que se mantendrá fría.
Poner un trozo de film transparente directamente en contacto con el ganache.
Dejar enfriar toda la noche en un lugar fresco. Al día siguiente, se puede retirar la película de plástico y decolorar el marco pasando una hoja de cuchillo sumergida en agua caliente por el interior del marco.
Cortar rodajas en el ganache y luego cubos.
Hacer rodar los cubos de ganache entre las manos para hacer pequeñas bolas.
A continuación, pon las bolas en un bol con cacao en polvo sin azúcar.
Retirar las trufas cuando estén bien cubiertas de cacao. Manéjelos con cuidado y colóquelos en una pequeña caja hermética. Deben conservarse en un lugar fresco para mantener su textura.
