Receita de trufas de chocolate clássico (para cerca de 100 pequenas trufas):
-400g de chocolate preto -60g de chocolate de leite -350g de creme completo -30g de manteiga mole -cacau em pó, adoçado em pó
Aqueça o creme em lume brando.
Colocar o chocolate numa tigela. Aqui fiz uma mistura de leite e chocolate negro.
Verter o creme quando está a ferver. Regue suavemente sobre o chocolate.
Mexer a partir do centro e trabalhar para o exterior.
Acrescentar a manteiga e misturar bem.
Verter todo o ganache para uma moldura 20X20X2. A armação é colocada sobre um tapete de cozedura que é colocado num prato que será mantido fresco.
Colocar um pedaço de película aderente directamente em contacto com o ganache.
Partir para arrefecer durante a noite num local fresco. No dia seguinte, a película de plástico pode ser arrancada e a moldura pode ser desbotada com uma lâmina de faca mergulhada em água quente dentro da moldura.
Cortar fatias no ganache e depois cubos.
Enrole os cubos de ganache entre as suas mãos para fazer pequenas bolas.
Depois colocar as bolas numa tigela de cacau em pó não adoçado.
Retirar as trufas assim que estiverem bem revestidas de cacau. Manuseie-os suavemente e coloque-os numa pequena caixa hermética. Devem ser mantidos num local fresco para manter a sua textura.
