En Vietnam, descubrí esta receta de deliciosas tortitas de hojas de pandan, también llamadas pandanus. Se rellenan con una crema aromatizada con la misma hoja y se sirven con cacahuetes tostados. Mencioné estas hojas en la receta del arroz pegajoso de mango en la que utilicé un aroma artificial. Así que aquí estoy cocinando y haciendo un zumo de pandan natural. El resultado es un color muy impactante y brillante.
Receta para dos tortitas:
Para el zumo de pandan :
6 hojas de pandan
225 ml de agua
Para la crema :
90g de zumo de pandan
110 g de leche de coco
40g de azúcar
10g de almidón de tapioca o 20g de harina de arroz (cantidades diferentes ya que el arroz no da la misma consistencia)
Para la masa de las tortitas :
90g de zumo de pandan
150 g de leche de coco
2 huevos
80g de harina
1/4 de cucharadita de polvo de hornear
40g de azúcar
75 g de cacahuetes tostados para servir
Estas son las hojas de pandanus. Puedes encontrarlas frescas en los supermercados asiáticos o en Internet.
Para hacer el extracto de hojas, ponga 6 hojas cortadas con tijeras en una batidora pequeña con 225 ml de agua.
Mezclar durante unos segundos.
A continuación, pasar por un colador fino. Exprima bien las hojas para extraer la máxima cantidad de sabor.
¡Aquí vamos!
Para la salsa, pon el almidón de tapioca (o la harina de arroz) con el azúcar en una cacerola pequeña.
Añadir el zumo de pandan y la leche de coco.
Mezclar bien y llevar a ebullición a fuego lento.
Déjalo hervir durante 30 segundos, y eso es todo para la salsa.
Para la masa de las tortitas, vierta el zumo de pandanus en un recipiente.
Añadir el azúcar, la levadura en polvo y la harina y mezclar bien con un batidor.
Añadir la leche de coco y el huevo y mezclar una última vez.
Calentar la sartén (24 cm) a fuego bastante alto con un poco de aceite.
Retire el exceso con una toalla de papel.
Vierta la mitad de la masa para hacer la primera tortita.
Bajar el fuego y cocinar durante 5-7 minutos. También puedes ponerle una tapa.
La parte superior debe estar bien agarrada. En esta receta no se le da la vuelta a la torta.
Picar los cacahuetes.
Verter un tercio de la crema en la tortita y espolvorear con cacahuetes.
Haz lo mismo con la segunda tortita. A continuación, se puede repartir el último tercio de la crema entre las dos tortitas. Es un poco menos bonito en la foto, ¡pero muy bueno en la realidad!
