Hoy os ofrezco una alternativa a la clásica tortilla. Tomate, pimientos rojos, unas gotas de tabasco, un toque de remolacha, esta tortilla rojo pasión se tomará como aperitivo. Me parece perfecto para acompañar mi Gazpacho Alvalle. Con el buen tiempo, puedes preparar todo con antelación para un picnic muy sabroso y fresco.
Receta para una tortilla roja:
-2 patatas -un pequeño paquete de remolacha ya cocida -1 medio pimiento rojo -6 huevos -3 cucharadas colmadas de pasta de tomate doble -unas gotas de Tabasco -sal pimienta
Empieza por pelar las patatas.
A continuación, córtalas en rodajas de 3 mm.
Mezclar la remolacha con una cucharada de agua.
Verter el puré de patatas sobre las patatas.
Dejar en un lugar fresco durante una hora.
Llene una sartén pequeña hasta la mitad con aceite de oliva. Poner a fuego lento o moderado y añadir las patatas sin el jugo de remolacha.
Cocer a fuego lento durante unos 20 minutos hasta que las patatas estén tiernas.
Mientras tanto, batir los huevos con la pasta de tomate doble.
Cortar los medios pimientos en trozos pequeños.
Añadir a los huevos batidos.
Cuando las patatas estén tiernas, retíralas del aceite.
Añádelas a los huevos.
Mezclar suavemente sin romper las patatas.
Retirar el aceite de la sartén, dejando el equivalente a dos cucharadas.
Añadir la mezcla a la sartén a fuego lento.
Dejar cocer suavemente. Cuando la parte superior comience a cocinarse, ponga una tapa en la sartén. Dar la vuelta, desmoldar y reposar en la sartén por el otro lado.
Dejar cocer unos minutos más hasta que el fondo esté cocido.
Sirve la tortilla cortada en trozos y acompáñala con un vaso de Gazpacho Alvalle. También puedes añadir unos trocitos de pimiento al gazpacho.
