Hoje ofereço-vos uma alternativa à clássica tortilla. Tomate, pimentos vermelhos, algumas gotas de tabasco, uma pitada de beterraba, esta tortilha vermelha da paixão será comida como aperitivo. Acho perfeito acompanhar o meu Alvalle Gazpacho. Com o bom tempo, pode preparar tudo com antecedência para um piquenique muito saboroso e fresco!
Receita para uma tortilha vermelha:
-2 batatas -uma pequena embalagem de beterraba já cozida -1 meio pimento vermelho -6 ovos -3 colheres de sopa amontoadas de pasta dupla de tomate -a poucas gotas de Tabasco -sal, pimenta
Comece por descascar as batatas.
Depois cortá-los em fatias de 3mm.
Misturar a beterraba com uma colher de sopa de água.
Verter o puré de batata sobre as batatas.
Partir num local fresco durante uma hora.
Encher uma pequena frigideira a meio caminho com azeite de oliva. Colocar em lume brando a moderado e adicionar as batatas sem o sumo de beterraba.
Ferva em fogo brando durante uns bons 20 minutos até as batatas estarem tenras.
Entretanto, bater os ovos com a pasta dupla de tomate.
Cortar as meias pimentas em pequenos pedaços.
Acrescentar aos ovos batidos.
Quando as batatas estiverem tenras, retirá-las do óleo.
Acrescentá-los aos ovos.
Misturar suavemente sem partir as batatas.
Retirar o óleo da frigideira, deixando o equivalente a duas colheres de sopa.
Acrescentar a mistura à panela em lume brando.
Deixar cozinhar suavemente. Quando o topo começar a cozinhar, colocar uma tampa na frigideira. Virar, desdobrar e descansar na frigideira do outro lado.
Deixar cozinhar durante mais alguns minutos até o fundo estar cozinhado.
Servir a tortilha cortada em pedaços e servir com um copo de Alvalle Gazpacho. Pode também adicionar alguns pequenos pedaços de pimenta ao Gazpacho.
