La tortilla española es una tortilla de patatas gruesa, a menudo con cebolla. Es un plato delicioso, típico y popular en este país. Os doy la receta básica, muy sencilla de hacer, ciñéndose lo más posible a la tradición. La tortilla suele servirse con ensalada para la cena o el almuerzo, pero también puede comerse como tapa en los bares, tal cual o cortada en dados sobre un trozo de pan…
Receta de la «tortilla española» para 2 o 3 personas:
-6 huevos
3 ó 4 patatas medianas
-1/2 cebolla
-3 dientes de ajo
-Aceite de oliva
-sel
Prepara todos los ingredientes…
Pelar las patatas.
Córtalas en rodajas finas.
Por supuesto, se puede utilizar una mandolina, pero es mucho trabajo para 3 patatas.
En una sartén de 20 cm de diámetro, poner 25 cl de aceite de oliva (sí, es mucho pero es sólo para cocinar las patatas y la media cebolla). Calentar a fuego moderado o bajo. Añadir los dientes de ajo.
Cuando el ajo empiece a burbujear, añade las patatas.
Dejar cocer a fuego lento para que se cuezan las patatas pero sin que se doren. Dejar cocer de 5 a 10 minutos.
Picar finamente la media cebolla.
A continuación, añádelo a las patatas.
Dejar cocer de nuevo (todavía a fuego lento).
Poner los huevos en un bol grande.
Bátalas con un tenedor y luego sálalas.
Cuando las patatas estén cocidas, (la carne está tierna pero no dorada), retíralas con una espumadera , escúrrelas bien…
No te olvides de quitar los dientes de ajo.
A continuación, añadirlos a los huevos batidos.
Mezclar bien porque los huevos se ligeramente cocinan con el calor de las patatas.
Retirar el aceite de la sartén, dejando una pequeña cantidad (una o dos cucharadas). Dejar que se caliente a fuego moderado.
Vierta la mezcla en la sartén.
Empezar a mezclar como huevos revueltos con una cuchara de madera.
Dejar cocer con una tapa. Remover el interior de la tortilla de vez en cuando, dejando el borde cocido. Cuando el exterior comience a dorarse, coloque un plato o una fuente plana (!!) sobre la sartén.
Dar la vuelta a la sartén de inmediato.
A continuación, transfiera con cuidado la tortilla de nuevo a la sartén.
Deja que se cocine el otro lado, doblando el borde por debajo de la tortilla.
Cuando la tortilla esté cocida, ponla en una fuente y disfrútala caliente o fría como aperitivo.
