Aquí está, por fin, la receta de «Tom Kah Gai». Presento la receta tal y como la aprendí a hacer en Bangkok. Es una sopa tailandesa elaborada con leche de coco, galangal, hierba limón, chile rojo, lima, hojas de lima kaffir y pollo. Es una verdadera explosión de múltiples sabores. Puede ser un poco difícil para algunos encontrar todos los ingredientes, pero sé por experiencia que en la mayoría de las tiendas «exóticas» no es imposible encontrar lo básico para esta maravillosa sopa. Y dado el resultado, que es muy superior y mucho más barato que en los restaurantes tailandeses, aconsejo a todo el mundo que pruebe esta receta para obtener una verdadera poción mágica.
Ingredientes para el «Tom Kah Gai» para 4 personas:
-1 litro de leche de coco (yo uso el cartón de la marca Aroy-D)
-1/2 cucharadita de sal
-25g de azúcar moreno
-25g de Nuoc Nam
-80 g de galanga fresca
-4 tallos de hierba de limón
-el zumo de 1+1/2 limas
-8 hojas de limón (o de lima kaffir, según el nombre)
-2 o 3 guindillas rojas frescas pequeñas
-un pequeño manojo de cilantro
-3 muslos de pollo (mucho más blandos que la carne blanca, que no se recomienda en esta receta)
-12 setas frescas o rebozuelos
Comience por verter la leche de coco en una cacerola grande.
Este es el aspecto del galangal. Se parece un poco al jengibre.
Córtalo en rodajas con un buen cuchillo porque el galangal es bastante fuerte.
Intente cortar rodajas de 2 o 3 mm.
Echar los 80g de galanga en la leche de coco.
Deshuesar los muslos de pollo y quitarles la piel. Luego se corta en 4 trozos más pequeños. Poner estos trozos en la sartén. Añadir media cucharada de sal. Poner la sartén a fuego lento.
Mientras tanto, prepare el resto de los ingredientes. Cortar los champiñones paja por la mitad. Estas setas son bastante difíciles de encontrar frescas, pero se pueden conseguir en latas y si las lavas bien, van muy bien en esta sopa. Para los alérgicos a los productos enlatados, sugiero utilizar setas frescas como el clavo. Pero es la única seta que es adecuada. Es mejor no poner nada que setas de botón o setas de ostra (¡que me encantan!).
Corte los extremos de los tallos de la hierba de limón. Lavándolos…
Y aplástalos con un martillo para liberar su fragancia. Aún así, hay que aplastar con suavidad y no hacer estallar el tallo contra las paredes.
Lavar los chiles y las hojas de limón. A continuación, hay que arrancar las hojas para liberar todo el aroma posible.
El resto de la receta es sencilla.
1- Cuando el pollo esté casi cocido, añadir las setas, la hierba limón, las hojas de limón y las guindillas ligeramente machacadas.
2- Cuando la sopa empiece a hervir, retirar del fuego, añadir los 25g de azúcar, el nuoc nam y el zumo de lima. Pruebe y rectifique la sazón.
3- Volver a hervir durante 5 minutos y servir con las hojas de cilantro.
La sopa también puede prepararse durante el día y servirse por la noche y dejarse infusionar por la tarde. Los sabores serán aún más intensos.
Olvidé mencionar que algunos de los ingredientes no son consumibles. El galangal, las hojas de limón, los tallos de hierba limón y la guindilla están ahí para infusionar en esta maravillosa sopa.
