أخيرا ها هي الوصفة “توم كاه جاي”! أقدم لكم الوصفة كما تعلمت صنعها في بانكوك. إنه حساء تايلاندي مصنوع من حليب جوز الهند وخولنجان وعشب الليمون والفلفل الأحمر والليمون وأوراق الليمون الكفيري والدجاج. إنه انفجار حقيقي للعديد من النكهات. قد يكون من الصعب بعض الشيء على البعض العثور على جميع المكونات ، لكنني أعلم من التجربة أنه في معظم المتاجر “الغريبة” ، ليس من المستحيل العثور على أساسيات هذا الحساء الرائع! وبالنظر إلى النتيجة ، وهي أفضل بكثير وأقل تكلفة بكثير من المطاعم التايلاندية ، أنصح الجميع بتجربة هذه الوصفة للحصول على جرعة سحرية حقيقية!
مكونات “Tom Kah Gai” لـ 4 أشخاص:
– لتر من حليب جوز الهند (أستخدم كرتون ماركة Aroy-D)
-1/2 ملعقة صغيرة ملح
– 25 جرام سكر بني
-25 جرام نوك نام
-80 جرام من الخولنجان الطازج
-4 سيقان من عشب الليمون
– عصير 1 + 1/2 ليمونة
-8 أوراق ليمون (أو أوراق كافير حسب الاسم)
-2 أو 3 فلفل أحمر طازج صغير
– حفنة صغيرة من الكزبرة
– 3 أفخاذ دجاج (أكثر ليونة من الأبيض ، يجب تجنبها في هذه الوصفة!)
– 12 قش فطر أو شانتيريل طازج
ابدأ بصب حليب جوز الهند في قدر كبيرة.
هذا ما يبدو عليه الخولنجان. يبدو قليلا مثل الزنجبيل.
قطعها إلى شرائح بسكين جيد لأن الخولنجان مقاوم تمامًا!
حاول قطع شرائح 2 أو 3 مم.
ضعي 80 جم من الجالنجا في حليب جوز الهند.
عظم أفخاذ الدجاج وإزالة الجلد. ثم تقطع إلى 4 قطع أصغر. ضع هذه القطع في المقلاة. أضف نصف ملعقة صغيرة من الملح. ضع القدر على نار خفيفة.
في غضون ذلك ، تحضير باقي المكونات. قطع عيش الغراب إلى نصفين. يصعب العثور على هذا الفطر طازجًا ، ولكنه موجود معلب وغسله جيدًا ، يتناسب جيدًا مع هذا الحساء. بالنسبة لأولئك الذين يعانون من الحساسية تجاه المنتجات المعلبة ، أقترح في هذه الحالة استخدام الفطر الطازج مثل الفطر. لكنه الفطر الوحيد الذي يمكن استخدامه. من الأفضل عدم وضع أي شيء على الإطلاق بدلاً من عيش الغراب أو فطر المحار (الذي أحبه رغم ذلك !!).
قطع نهايات سيقان الليمون. اغسلهم…
وسحقهم بمطرقة ليطلقوا عطرهم! من الضروري سحق كل نفس برفق وعدم تفجير القضيب لإسقاطه على الجدران.
اغسل الفلفل وأوراق الليمون. ثم عليك أن تمزق الأوراق لإطلاق أقصى قدر من النكهة!
بقية الوصفة بسيطة.
1- عندما يبدأ الدجاج في النضج تقريبًا ، أضيفي الفطر والليمون وأوراق الليمون والفلفل المطحون قليلاً.
2- عندما يبدأ الحساء في الغليان ، يرفع عن النار ويضاف 25 جرام من السكر ونووك نام وعصير الليمون. الذوق وضبط التوابل.
3- يعاد الغليان لمدة 5 دقائق ويقدم مع أوراق الكزبرة.
يمكنك أيضًا تحضير الحساء أثناء النهار لتقديمه في المساء وتركه ينقع في فترة ما بعد الظهر. ستكون النكهات أكثر كثافة!
نسيت أن أذكر أن بعض المكونات لا يمكن أكلها !! الخولنجان ، أوراق الليمون ، سيقان الليمون ، الفلفل الحار موجودة فقط لتغمر في هذا الحساء الرائع!
